French cooking is considered the height of culinary technique, mostly because French chefs know how to let each ingredient shine through, singing in its own simplicity and freshness.
That said, the French can make a mean cheeseburger too, and that's what you get when you dine at Benoit in New York City, Stateside sister to Michelin-star restaurant Benoit in Paris.
Benoit NYC's executive chef Alberto Marcolongo knows more than a thing or two about making great burgers, and he's agreed to share his fan-favorite cheeseburger on brioche recipe below.

“The Benoit Cheeseburger is an amazing dish for both lunch and dinner,” Marcolongo says. “What makes it unique is the daily preparation of the burger. The bun is made daily by our pastry team. The patty is mixed with veal jus to keep it juicy and tasty. The bacon is smoked with applewood and gives the burger its crunchiness. Our cheeseburger is prepared with confit onions and cheese. The last touch is a spoonful of veal jus, greatly adding to its taste."

Next time you’re in the Big Apple, you simply must try this world-famous cheeseburger—but you don’t have to leave the comfort of your own couch to give it a taste.
This recipe yields 10 servings, so make sure you invite all your best friends and favorite family members for a Parisian soiree.
Benoit Cheeseburger with Caramelized Onion and Bacon
Ingredients:
Burger Buns
- 2.5 cup all purpose flour
- 1 cup bread crumbs
- 1.2 tbsp sugar
- 1 tbsp salt
- 1.5 tbsp fresh yeast
- 3 pc whole eggs
- 10 tbsp butter
- 9 tbsp water
- 4 tbsp milk
Patty
- 3 lb flat iron
- 1lb beef fat
- 5 tbsp veal stock
Garnish
- 2 pc white onion
- 30 slices maple syrup cured bacon
- 2 tbsp EVOO
- 20 slices American white cheese
- 10 ct French fries set
Directions:
Burger Buns
- Mix and knead all of the dough ingredients to make a soft, smooth dough.
- Cover the dough and let it rise until it’s nearly doubled in bulk, about 1 to 2 hours.
- Gently deflate the dough and divide it into eight pieces.
- Shape each piece into a ball. Flatten each dough ball with the palm of your hand until it’s about 3” across.
- Place the buns on a lightly greased or parchment-lined baking sheet. Cover and let rise until noticeably puffy, about 2 hours.
- Toward the end of the rising time, preheat the oven to 375°F.
- Bake the buns for 15 to 18 minutes, until golden.
Patty
- Clean the flat iron removing all the fat and nerves (keep the fat for later).
- Cut into cubes and pass through a meat grinder, meat with the fat and all.
- Mix all the ingredients together, and form the patty by hand.
Garnish
- Cook the bacon and reserve it.
- In the same pan, sweat the onions until they are well cooked and golden.
Burger
- Cut the bread in half and slightly toast with butter.
- Cook the patty with olive oil.
- Once ready, add 2 slices of cheese and let it melt.
- Combine all the ingredients and serve with French fries.
